Orange-Vanilla Frozen Custard

Ingredients
Cornstarch
1 1/2 cups milk (divided into 1/2 cup and 1 cup portions)

Eggs
Sugar
Salt

Heavy cream
Vanilla extract
Orange juice concentrate

Orange zest
Directions
In a small bowl, whisk together the cornstarch and 1/2 cup of milk until smooth. Set aside.

In a medium saucepan, whisk the eggs, sugar, and salt until well combined. Gradually stir in the cornstarch mixture and remaining 1 cup of milk until the mixture is silky and free of lumps.
Cook over low heat, stirring constantly with a rubber spatula, until the mixture thickens enough to coat the back of a spoon (7–8 minutes). Do not let it boil—this prevents curdling.
Strain the mixture through a fine-mesh sieve into a clean bowl to remove any lumps. Set the bowl in a larger container of ice water and add the cream, stirring until the mixture cools to room temperature.

Remove from the ice bath and stir in the vanilla extract, orange juice concentrate, and orange zest. Cover tightly and chill in the refrigerator until completely cold (at least 2 hours or overnight).
Pour the chilled mixture into an ice cream maker and freeze according to the manufacturer’s instructions. Once frozen, transfer the custard to a pastry bag fitted with a large star tip and pipe into serving cups for a decorative finish.
