How to Make Low-Country Boil
Fill a 7-gallon stockpot halfway with water (or use two large pots and split the ingredients evenly). Add your favorite seasoning blend and bring to a rolling boil.
Drop in the whole potatoes. Let the water return to a boil, then cook for 5 minutes.

Stir in the onions and sausage. Bring back to a boil and cook for 15 minutes.
Add the corn. Bring the water to a boil again and cook for 10 minutes, or until the potatoes are tender when pierced.
Finally, add the shrimp. Bring the water to a boil and cook until the shrimp turn bright pink (about 3 minutes).

Drain everything through a colander (discard the liquid) and serve on newspaper or a large platter for a classic, casual feel.
