Step 1: Prepare the Citrus Salsa Verde

1. Segment the oranges: Peel each orange, trim the ends, and use a paring knife to cut along the membranes separating the segments. Free the segments and add them to a medium bowl.

2. Mix in herbs and seasonings: Add a drizzle of olive oil, a squeeze of lemon juice, chopped parsley, thinly sliced scallions, chopped mint, capers, a pinch of orange zest, a pinch of lemon zest, and a sprinkle of red pepper flakes. Toss gently to combine.
